Manchego 200gms


Presenting our BV Manchego. Traditionally made with Sheep’s milk in the Castile- La Mancha region of Spain. It’s often considered the king or queen if you may, of the Spanish cheese world. Many variants though are made with a mix of milks, sometimes with no Sheep’s Milk at all, but that’s a different story.
Given we work exclusively with A2 cows milk, the process we follow is a similar one, and with around 5-6 months of ageing. The moulds however are the real deals.
Here’s a semi hard cheese, with beautiful sweetness and mellowness inspired by the Spanish beauty, great as a table cheese, or to top something with as well. Maybe a little honey, walnuts and crackers? With a now very elusive glass of 🍷
